In general, though, confectionery is divided into two broad and somewhat overlapping categories, bakers' confections and sugar confections. What are candies made out of? Candy is made by dissolving sugar in water or milk to form a syrup, which is boiled until it reaches the desired concentration or starts to caramelize. Why do they call it candy? Candy, also called sweets or lollies, is a confection that features sugar as a principal ingredient. The category, called sugar confectionery, encompasses any sweet confection, including chocolate, chewing gum, and sugar candy. Is a chocolate candy? Technically, anything sweetened with sugar or syrup can be classified as candy. Chocolate is also frequently combined with other non-candy items, such as nuts or fruit, in order to make them candy.
